USA: Food Safety and Inspection Services (FSIS) notice on compliance guidelines for allergens and ingredients available

The FSIS has filed a notice that the compliance guidelines ‘Allergens and Ingredients of Public Health Concern: Identification, Prevention and Control, and Declaration through Labeling’ is available. The document provides guidance to assist establishments in meeting FSIS regulations.
Proper declaration of allergens, properly identifying incoming ingredients and proper handling and processing of allergenic products are the establishment’s responsibility. If a discrepancy is found between the packaged product and the label, or if the product is mislabelled, it is critical that the product is separated and does not enter commerce (FSIS Compliance Guidelines, 25 April 2014).
