Overview antimicrobial gelatin-based nanocomposite films

Gelatin possesses good film forming properties, along with desirable packaging properties, such as a low gas barrier property and heat seal ability. However, some problems exist, such as moisture sensitivity, rather a low mechanical strength, and low process ability. These problems have limited the industrial application of the film.
The recent development of nanocomposite technology has provided renewed opportunities for the use of gelatin-based nanocomposite films in the food packaging industry. In a chapter in Antimicrobial Food Packaging researchers at Mokpo National University in the Republic of Korea provide an overview on gelatin-based antimicrobial nanocomposite films.
