HACCP plan for a chicken ball plant in Bangladesh

Researchers at Sylhet Agricultural University in Bangladesh designed a Hazard Analysis and Critical Control Point (HACCP) plan for chicken ball production based on actual conditions in the plant. The prerequisite program, hazards, critical control point, preventive measure, critical limits, monitoring procedure and corrective actions were designed in this HACCP plan.
Five CCPs were found, including the supply of raw material and packaging material; proper inspection during packing for foreign materials and proper storage & distribution temperature and time of final product. An article about the research was published in the Journal of Hygienic Engineering and Design.
