Report: FSIS Compliance Guideline for the Listeria Rule on post-lethality exposed Ready-to-Eat meat and poultry products

The USDA Food Safety and Inspection Service (FSIS) provides a compliance guideline with specific recommendations on how to meet the requirements of the Listeria Rule for ready-to-eat (RTE) meat and poultry products. The guideline covers the denomination of additional information on labelling of RTE products.
Claims concerning the control of Listeria by using Post-lethality Treatments or Antimicrobial Agents and Processes may be declared voluntarily. Any antimicrobial agents added to RTE products or included in the primary packaging material of RTE products requires declaration in the ingredient statement on the label (FSIS Listeria Guideline, January 2014).
